Does anyone know this book "The Dogs of Scotland" by Thompson Gray, published in 1891 by James P. Mathew in Dundee? It's supposed to have a chapter on deerhounds. I was wondering if it's worth trying to get hold of a copy.

Depending on your interest - yes it is worth reading or getting.
One of the better chapters on the breed - also, from a Scottish perspective.
If you can't find or purchase the book, you could try the KC Library, and see if you are able to purchase a photocopy of the chapter.
Unfortunately the book is not (yet) on the Internet Archive, an invaluable source for old, out of copyright books. Richard

Amazon have this book listed but "currently Unavailable". It is available on e-bay , as a "buy it now" at £150 !!!!!
